Sweet potatoes are indeed a nutrition powerhouse! They are loaded with beta carotene, vitamin C, potassium, manganese, vitamin B6, vitamin B5, vitamin E, vitamin K, pantothenic acid, copper, iron, calcium, choline, folate, niacin, chlorogenic acid, and anthocyanins. Phew! (Say that three times!)
