#153: Eco-Nutrition with Dietitian Mary Purdy
“Change is driven by consumer demand. So now you have the knowledge. Knowledge gives you power. So you can use your power, as a consumer, to demand things.” -Mary Purdy
Mary Purdy is a rare breed. As a self-described eco-dietitian she is very passionate about how what we eat affects the world around us. Now she spends time educating and informing others about this important relationship. After I found her on social media I knew I had to include her in this years environmental sustainability mini-series.
In this episode of Veggie Doctor Radio, I have an upbeat conversation with Mary Purdy about food, our environment and sustainability.
We discuss:
What an eco-dietitian is and how she became one
How what we eat impacts the environment
What are the big food players in environmental sustainability
What can we do as consumers to Eat for the Environment
If someone must be vegan or eat organic to do their part in this movement
What we can do to decrease waste in our kitchens
Tips for those just getting started on their sustainability journey
What her wildest dream come true would be for the world
What she wishes more people knew
The personal habit she is most proud of
